Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 cup butter, softened
  • 1 1/2 cups finely ground pecans or walnuts
  • 1/4 tsp salt
  • 1 tsp pure vanilla extract
  • 2-3 cups powdered sugar (for coating)

Instructions

  • Preheat oven to 300°F (150°C)
  • In a large bowl, whisk together flour, ground nuts, and salt
  • Add softened butter and vanilla extract. Mix until just combined
  • Form dough into 1-inch balls and place on parchment-lined baking sheets
  • Bake 14 minutes or until golden brown but tender
  • Let cool slightly, then roll each cookie in powdered sugar
  • Store in an airtight container at room temperature

Notes

Use a food processor to finely grind nuts for best crust
For a crisper texture, freeze dough balls 15 minutes before baking
