Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons finely grated lemon zest
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 350°F (175°C)
  • In a bowl, cream butter and sugar until light and fluffy
  • Add eggs one at a time, mixing well after each
  • Fold in lemon juice, zest, salt, and baking soda
  • Gradually add flour, mixing until dough forms
  • Chill dough 15 minutes
  • Scoop 1 oz dough balls, space 2 inches apart on baking sheets
  • Bake 12-14 minutes until golden around edges
  • Let cool completely before glazing

Notes

Use freshly squeezed lemons for maximum flavor
Cool cookies fully before adding glaze
Store in airtight container at room temperature up to 3 days
If glaze is too thick, add 1 tsp water at a time
For paleo/low-sugar option, substitute sugar with 1 cup powdered erythritol
