Ingredients

  • 2 medium zucchini, thinly sliced
  • 1 tbsp olive oil or cooking spray
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder or paprika (optional)
  • 2 tbsp parmesan cheese (optional)
  • 1/4 cup panko breadcrumbs (optional)

Instructions

  • Wash the zucchini thoroughly and pat dry with a clean towel.
  • Slice the zucchini into thin, even rounds about 1/8 inch thick.
  • Lightly sprinkle salt over the slices and let them sit for 5–10 minutes, then pat dry to remove excess moisture.
  • Lightly coat the zucchini slices with olive oil or cooking spray and season with salt, pepper, and optional spices.
  • Preheat the air fryer to 375°F (190°C).
  • Arrange the zucchini slices in a single layer in the air fryer basket without overlapping.
  • Cook for 8–12 minutes, flipping halfway through, until the chips are golden and crispy.
  • Remove from the air fryer and let cool slightly before serving. Chips will crisp further as they cool.

Notes

For best results, slice zucchini evenly and remove excess moisture before cooking. Avoid overcrowding the air fryer basket and cook in batches if needed. For extra crunch, coat slices with panko breadcrumbs. Serve immediately, as zucchini chips are best enjoyed fresh.
