Ingredients

  • 1 box strawberry cake mix (15.25 oz)
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1/4 cup crushed freeze-dried strawberries (optional)
  • 2 tablespoons white granulated sugar for topping (optional)

Instructions

  • Preheat your oven to 350°F and allow it to heat fully before baking.
  • Line two large baking sheets with parchment paper or silicone baking mats.
  • Gather all ingredients near your workspace before mixing.
  • Pour the dry strawberry cake mix into a large bowl and whisk away any lumps.
  • Add the vegetable oil and stir until the mixture resembles wet sand.
  • Beat the eggs in a separate bowl and add them to the cake mixture.
  • Mix the dough for about 2 minutes until thick and evenly combined.
  • Fold in the crushed freeze-dried strawberries if using.
  • Drop rounded teaspoons of dough onto the prepared baking sheets about 2 inches apart.
  • Press a small freeze-dried strawberry piece onto each cookie if desired for decoration.
  • Bake for 10 to 12 minutes until the edges are lightly golden and the centers remain soft.
  • Let the cookies rest on the baking sheet for 2 minutes after baking.
  • Transfer the cookies carefully to a wire rack using a spatula.

Notes

Use room temperature eggs for smoother mixing and softer cookies. Do not overbake — remove cookies when the edges are lightly golden and centers still appear soft. Freeze-dried strawberries add extra flavor and texture but are optional. Store cookies in an airtight container for up to 5 days.
