Ingredients

  • 1 cup grits
  • 4 cups water or chicken broth
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil or butter (for cooking shrimp)
  • 4 slices bacon (optional)

Instructions

  • Bring water or chicken broth to a boil. Slowly whisk in the grits, reduce heat, and cook while stirring until thick and creamy. Stir in butter and cheese.
  • Season the shrimp with salt, pepper, and paprika.
  • Heat oil or butter in a skillet and cook shrimp for 2–3 minutes per side until pink and cooked through. Remove and set aside.
  • In the same pan, cook bacon if using, then sauté garlic until fragrant.
  • Return shrimp to the pan and toss to combine with flavors.
  • Spoon grits into bowls, top with shrimp and sauce, and serve immediately.

Notes

Use chicken broth instead of water for deeper flavor. Add bacon or sausage for a smoky twist, or finish with a squeeze of lemon for brightness. Stir grits slowly to avoid lumps and cook shrimp just until pink to keep them tender.
