Ingredients

  • 3 egg whites
  • 1 cup granulated sugar
  • 1 tsp vinegar
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1 cup chopped pecans

Instructions

  • Preheat the oven to 300°F.
  • Place pecans in a zip bag and crush them.
  • Beat egg whites until foamy.
  • Add vinegar and continue beating.
  • Add a pinch of salt and mix.
  • Gradually add sugar while beating until stiff peaks form.
  • Fold in crushed pecans gently.
  • Drop spoonfuls onto a baking sheet.
  • Place cookies in the oven, then turn the oven OFF immediately and keep the door closed.
  • Leave cookies in the oven overnight without opening the door.
  • Open the oven the next morning and serve the hollow cookies.

Notes

Best prepared the night before Easter and left in the oven overnight without opening the door. You can substitute cream of tartar with a few drops of lemon juice. Store in an airtight container and keep away from moisture for best texture.
