Ingredients

  • 1 cup pineapple juice (fresh or store-bought)
  • 1/2 cup coconut cream
  • 2 cups vanilla ice cream
  • Optional: fresh pineapple chunks (1/2 cup) or shredded coconut (1 tsp for garnish)

Instructions

  • Add pineapple juice, coconut cream, and vanilla ice cream to a blender.
  • Blend on high until smooth and creamy (2-3 minutes). If the mixture is too thick, add a splash of juice to reach your desired consistency.
  • Divide into two glasses and garnish with fresh pineapple chunks or a sprinkle of shredded coconut if desired.

Notes

Use fresh pineapple chunks in addition to juice for a more vibrant flavor.
