Ingredients

  • 8-10 fresh mint leaves
  • 4 limes, juiced (about 1/2 cup)
  • 2 cups vanilla ice cream
  • 1/2 cup heavy cream
  • 2 tablespoons sugar
  • 2 tablespoons water (or additional ice for thickness)

Instructions

  • Lightly crush mint leaves to release their oils with a muddler or spoon.
  • In a high-powered blender, combine mint leaves, lime juice, sugar, and water. Blend until fully pureed.
  • Add half the heavy cream and all the ice cream to the blender. Blend again until smooth and creamy.
  • If the mixture is too thick, add remaining heavy cream and blend briefly to thin.
  • Pour into two large glasses and garnish with fresh mint and lime wedges.

Notes

For a non-dairy version, use coconut cream and plant-based ice cream.
Ensure ingredients are well-frozen for optimal texture.
Serve immediately for best consistency; thicker shaking may cause separation.
