Ingredients

  • 2 cups vegetable broth
  • 1 cup semolina couscous
  • 1 tsp olive oil
  • 1 small onion, diced
  • 1 carrot, grated
  • 1 bell pepper, chopped
  • 1 cup chopped fresh kale or spinach
  • 1 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt to taste

Instructions

  • Sauté vegetables: Add olive oil to the Instant Pot. Brown onion, carrot, and bell pepper for 3-4 minutes.
  • Add remaining ingredients: Stir in couscous, broth, spices, and herbs.
  • Pressure cook: Secure lid, set to sealing. Cook on HIGH for 8 minutes, then allow natural release for 10 minutes.

Notes

Use any broccoli/fennel/zucchini for vegetable variety
Lemon zest adds bright flavor
Add toasted pine nuts for texture
Store leftovers refrigerated for 4-5 days
