Equipment

  • mixing bowls
  • electric mixer
  • rubber spatula
  • baking sheets
  • parchment paper
  • wire cooling rack
  • small skillet
  • pastry brush

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1/3 cup toasted sesame seeds
  • 1 tbsp beaten egg white

Instructions

  • Toast the sesame seeds in a dry skillet over medium heat for 3 to 4 minutes until fragrant and lightly golden.
  • Transfer the toasted sesame seeds to a plate and allow them to cool completely.
  • Preheat the oven to 350°F and line two baking sheets with parchment paper.
  • Sift the flour and salt together into a medium mixing bowl.
  • Cream the softened butter and granulated sugar together until pale and fluffy.
  • Add the egg yolk and vanilla extract and beat until fully incorporated.
  • Gradually add the flour mixture and mix until a soft dough forms.
  • Fold the toasted sesame seeds gently into the dough using a spatula.
  • Scoop tablespoon-sized portions of dough and roll into smooth balls.
  • Arrange the dough balls on the prepared baking sheets about 2 inches apart.
  • Flatten each dough ball gently to about 1/2-inch thickness.
  • Brush the tops lightly with beaten egg white.
  • Press additional toasted sesame seeds onto the tops of the cookies.
  • Bake for 12 to 15 minutes until the edges are pale golden and the centers are set.
  • Cool the cookies on the baking sheet for 5 minutes before transferring to a wire rack.
  • Allow the cookies to cool completely before serving or storing.

Notes

Toast sesame seeds fresh before baking for the deepest nutty flavor and best aroma. Avoid overbaking; the cookies should remain pale golden rather than deeply browned. Allow cookies to cool completely before storing to maintain their crisp texture.
