Ingredients

  • 1.5 pounds beef short ribs
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 4 cups beef broth
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon tomato paste
  • Salt and black pepper

Instructions

  • Pat ribs dry and season with salt and pepper
  • Add oil to Instant Pot and sear ribs on all sides until browned
  • Sprinkle flour over ribs and stir into browned drippings
  • Add onion, garlic, thyme, bay leaves, broth, vinegar, and tomato paste
  • Secure lid, ensure valve is sealed, pressure cook on high for 60 minutes
  • Allow natural release for 30 minutes, then sauté to thicken sauce if desired

Notes

Use halal-certified beef if required
Skim fat from broth after natural release for a rarer tenderness
Leftover meat can be frozen in sauce for 3 months
Pair with buttered egg noodles or creamy polenta
