Ingredients
1.5 lbs (680g) chuck roast
1
tbsp
olive oil
1
medium onion, sliced
4
garlic cloves, minced
2
tsp
Italian seasoning (oregano, basil, thyme)

cup
beef broth
1
tsp
salt
1/2

black pepper

tbsp
tomato paste
Instructions
Preheat Instant Pot. Add olive oil, then sear chuck roast for 3 minutes per side
Add onion and garlic to pot; sauté 2 minutes
Sprinkle Italian seasoning, salt, pepper, and tomato paste over roast
Pour in beef broth and get 1/2 cup water
Close lid, set to 'Beef/Pressure' for 30 minutes (natural release for 15 minutes)
Shred meat directly in pot using two forks
Notes
Use gluten-free Italian seasoning if needed
Add 1/4 cup balsamic vinegar (omninos) for extra depth
Leftovers freeze well for up to 3 months
