Ingredients

  • 1.5 lbs (680g) chuck roast
  • 1 tbsp olive oil
  • 1 medium onion, sliced
  • 4 garlic cloves, minced
  • 2 tsp Italian seasoning (oregano, basil, thyme)
  • 1 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp tomato paste

Instructions

  • Preheat Instant Pot. Add olive oil, then sear chuck roast for 3 minutes per side
  • Add onion and garlic to pot; sauté 2 minutes
  • Sprinkle Italian seasoning, salt, pepper, and tomato paste over roast
  • Pour in beef broth and get 1/2 cup water
  • Close lid, set to 'Beef/Pressure' for 30 minutes (natural release for 15 minutes)
  • Shred meat directly in pot using two forks

Notes

Use gluten-free Italian seasoning if needed
Add 1/4 cup balsamic vinegar (omninos) for extra depth
Leftovers freeze well for up to 3 months
