Ingredients

  • 8 large yellow onions, sliced
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 4 slices crusty bread
  • 2 cups shredded Gruyère cheese

Instructions

  • Sauté onions in oil on high for 10 minutes until golden.
  • Add garlic, broth, vinegar, thyme, and bay leaf.
  • Lock Instant Pot lid and pressure cook for 10 minutes.
  • Quick-release pressure, stir, then ladle into bowls.
  • Top each with bread, Gruyère, and broil until cheese bubbles

Notes

Use a Dutch oven for optimal bread browning; substitute Gruyère with Comté.
Store leftovers refrigerated for up to 3 days.
