Ingredients

large yellow onions, sliced
3
tbsp
olive oil
3
cloves
garlic, minced
2
cups
vegetable broth
2
tbsp
balsamic vinegar
1
tsp
dried thyme
1
bay leaf
Salt and black pepper, to taste

slices
crusty bread

cups
shredded Gruyère cheese
Instructions
Sauté onions in oil on high for 10 minutes until golden.
Add garlic, broth, vinegar, thyme, and bay leaf.
Lock Instant Pot lid and pressure cook for 10 minutes.
Quick-release pressure, stir, then ladle into bowls.
Top each with bread, Gruyère, and broil until cheese bubbles
Notes
Use a Dutch oven for optimal bread browning; substitute Gruyère with Comté.
Store leftovers refrigerated for up to 3 days.
