A naturally carbonated, spiced ginger beer mocktail combining fresh ginger, citrus, and sparkling water for a refreshing, alcohol-free beverage that rivals store-bought versions.
1cupunsliced fresh ginger root (or 1/4 cup grated)
1/2cupsugar (adjust for sweetness)
Juice of 2 limes
1/2cupwater (adjust for potency)
1/4tspcream of tartar
1/4tspbaking soda
4cupschilled sparkling water (or plain water blended after carbonation)
Lime wedges and mint leaves for garnish
Instructions
Grate or thinly slice fresh ginger root
Combine ginger, sugar, lime juice, and 1/2 cup water in a saucepan
Simmer over medium heat 5-10 minutes (do not let sugar scorch)
Strain mixture into a sterilized bottle
Add cream of tartar and baking soda
Top up bottle with 2 cups of remaining water (activate carbonation)
Chill completely 2-4 hours
Before serving, top up with sparkling water and add garnishes
