Equipment

  • mixing bowl
  • whisk
  • loaf pan
  • spatula
  • oven

Ingredients

  • 3 cups gluten-free flour blend
  • 2 1/4 tsp active dry yeast
  • 1 1/2 cups warm water or milk
  • 2 eggs (or flax eggs)
  • 2 tbsp oil or melted butter
  • 1 tsp salt
  • 1 tsp xanthan gum or psyllium husk
  • 1 tsp sugar (for yeast activation)

Instructions

  • Mix warm water with yeast and sugar, then let it sit for 5–10 minutes until foamy.
  • In a large bowl, whisk together the gluten-free flour blend, salt, and xanthan gum.
  • Add the yeast mixture, eggs, and oil to the dry ingredients. Mix until a thick batter forms.
  • Transfer the batter into a lined loaf pan, smooth the top, and let it rise in a warm place for 30–45 minutes.
  • Bake at 375°F (190°C) for 35–45 minutes until golden and firm.
  • Allow the bread to cool completely before slicing to ensure proper texture.

Notes

For best results, ensure your yeast is fresh and fully activated before mixing. The dough should resemble a thick batter, not traditional dough. Let the bread cool completely before slicing to avoid a gummy texture. You can substitute eggs with flax or chia eggs for a vegan version.
