Equipment

  • cutting board
  • sharp knife or mandoline
  • mixing bowls
  • measuring cups and spoons
  • serving bowl

Ingredients

  • 2 large fresh cucumbers, thinly sliced
  • 1/2 medium onion, thinly sliced
  • 1/3 cup white vinegar or apple cider vinegar
  • 2 tbsp granulated sugar
  • 1 tsp salt (plus more for sweating cucumbers)
  • 1/4 tsp black pepper (optional)

Instructions

  • Slice the cucumbers and onion thinly using a sharp knife or mandoline for even pieces.
  • Place the cucumber slices in a bowl, sprinkle with salt, and let them sit for 10–15 minutes to release excess moisture. Pat dry.
  • In a separate bowl, mix vinegar, sugar, salt, and pepper until the sugar fully dissolves.
  • Add the cucumbers and onions to the dressing and toss gently until evenly coated.
  • Refrigerate the salad for at least 30 minutes to allow the flavors to develop.
  • Stir before serving and enjoy chilled as a refreshing side dish.

Notes

For best results, slice cucumbers thin and salt them before mixing to remove excess moisture. Chill for at least 30 minutes to enhance flavor. You can customize this recipe by adding tomatoes, fresh herbs, or a creamy base like sour cream or yogurt. For a bold twist, try adding soy sauce, garlic, and ginger.
