Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) cannellini beans, drained
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 4 cups chicken stock
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp all-purpose flour (optional for thickening)

Instructions

  • Heat olive oil in a skillet over medium heat; cook chicken until browned (optional)
  • Transfer chicken and all ingredients to crockpot
  • Cook on low 5-6 hours or high 2.5-3 hours
  • Remove bay leaf before serving

Notes

Dark meat works too
Use half-and-half if avoiding dairy
Freezes well for 3 months
Top with cilantro and avocado if desired
