Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tbsp soy sauce (low sodium optional)
  • 2 tbsp rice vinegar
  • 2 oranges (juice and zest)
  • 1 tbsp grated fresh ginger
  • 2 garlic cloves, minced
  • 1 tsp honey (or cornstarch for thickening)
  • 1 tsp sesame oil (optional)
  • 1 tbsp vegetable oil
  • salt and pepper

Instructions

  • Pat chicken dry and season with salt/pepper
  • Heat oil in a skillet, sear chicken 2-3 minutes per side (optional)
  • Combine orange juice, zest, soy sauce, vinegar, ginger, garlic, and honey in crockpot
  • Add chicken and pour 1 tbsp sesame oil over top
  • Cover and cook 6-7 hours on low (or 3-4 hours on high)
  • Shred chicken with two forks
  • Stir sauce to blend, skim excess oil if desired

Notes

Serve with jasmine rice or noodles
Adjust sweetness with more/less honey
Freeze cooked sauce up to 3 months
Substitute tamari for gluten-free
Add sliced scallions before serving
