Heat oil in a skillet, sear chicken 2-3 minutes per side (optional)
Combine orange juice, zest, soy sauce, vinegar, ginger, garlic, and honey in crockpot
Add chicken and pour 1 tbsp sesame oil over top
Cover and cook 6-7 hours on low (or 3-4 hours on high)
Shred chicken with two forks
Stir sauce to blend, skim excess oil if desired
Notes
Serve with jasmine rice or noodles
Adjust sweetness with more/less honey
Freeze cooked sauce up to 3 months
Substitute tamari for gluten-free
