Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons (juiced and sliced)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley (chopped, for garnish)

Instructions

  • Pat the chicken breasts dry and season both sides with salt, black pepper, oregano, and thyme
  • Heat olive oil in a skillet over medium heat and lightly brown the chicken on both sides (2-3 minutes per side)
  • Place browned chicken in the crockpot
  • Add minced garlic, lemon juice, and lemon slices to the crockpot
  • Cook on low for 6-7 hours or high for 3-4 hours
  • Garnish with fresh parsley before serving

Notes

For extra flavor, add a splash of non-alcoholic lemon-infused water or broth if the liquid seems too low
Serve with cooked rice, quinoa, or crusty bread to soak up the delicious lemon sauce
