Ingredients

  • 4 lb boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1.5 cups barbecue sauce
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 16 mini slider buns
  • 1 cup prepared coleslaw (optional)
  • 1/2 cup pickled onions (optional)

Instructions

  • Pat chicken breasts dry with paper towels.
  • Dice the onion and mince the garlic.
  • Add diced onion to the bottom of the crockpot in an even layer.
  • Season chicken breasts with salt, pepper, and paprika.
  • Place the chicken breasts over the onion layer.
  • Sprinkle minced garlic evenly over the chicken.
  • Pour chicken broth around the chicken.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Check that the chicken shreds easily with a fork.
  • Remove chicken and let cool for 3-5 minutes.
  • Shred the chicken using two forks.
  • Return shredded chicken to the crockpot.
  • Whisk together barbecue sauce, apple cider vinegar, and brown sugar.
  • Add the sauce mixture to the crockpot and stir until fully coated.
  • Keep warm for up to 2 hours, stirring occasionally.
  • Toast slider buns at 350°F for 2-3 minutes.
  • Fill each bun with pulled chicken.
  • Top with coleslaw and pickled onions if desired.
  • Add top buns and serve immediately.

Notes

For best results, add the barbecue sauce during the final 30 minutes of cooking to preserve flavor and prevent scorching. Keep the chicken on the warm setting until serving and avoid lifting the lid during cooking. Toast the slider buns lightly before assembling for better texture and structural integrity.
