Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1 large romaine lettuce head, chopped
  • 1/2 cup croutons
  • 1/3 cup shaved parmesan cheese
  • 1/4 cup Caesar dressing
  • 2 tbsp mayonnaise (for dressing)
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 clove garlic, minced

Instructions

  • Pat the chicken dry and season with olive oil, salt, pepper, and garlic powder.
  • Cook the chicken in a skillet over medium heat for 5–6 minutes per side until golden and fully cooked.
  • Let the chicken rest for a few minutes, then slice into strips.
  • In a small bowl, mix mayonnaise, Dijon mustard, lemon juice, garlic, and parmesan to make the dressing.
  • Add chopped romaine lettuce to a large bowl and toss lightly with a small amount of dressing.
  • Top with sliced chicken, croutons, and shaved parmesan.
  • Finish with extra dressing and a pinch of black pepper. Serve immediately.

Notes

For extra flavor, marinate the chicken with lemon, garlic, and olive oil before cooking. Use freshly grated parmesan for better taste. Keep lettuce completely dry to avoid sogginess. Add dressing just before serving. You can substitute grilled, crispy, or air fryer chicken depending on preference.
