Ingredients

  • 1 cup cheddar cheese (shredded)
  • 1 cup Monterey Jack cheese (shredded)
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp flour
  • salt to taste

Instructions

  • Melt butter over low heat.
  • Add flour and whisk until smooth.
  • Slowly pour in milk while stirring continuously.
  • Let the mixture thicken slightly.
  • Add shredded cheeses gradually while stirring.
  • Stir continuously until fully melted and smooth.
  • Adjust salt to taste and serve warm.

Notes

Always use low heat and add cheese gradually to prevent clumping. For extra flavor, add jalapeƱos, cumin, or paprika. Freshly grated cheese melts better than pre-shredded.
