Ingredients

  • 4 catfish fillets
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 2 eggs or 1 cup buttermilk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp oil spray

Instructions

  • Preheat the air fryer to 375°F to ensure even cooking and a crispy coating.
  • In one bowl, mix cornmeal, flour, salt, and pepper. In another bowl, whisk eggs or pour buttermilk.
  • Dip each catfish fillet into the egg or buttermilk, then coat evenly in the cornmeal mixture, pressing lightly to adhere.
  • Lightly spray both sides of the coated fillets with oil to help achieve a golden, crispy texture.
  • Place the fillets in a single layer in the air fryer basket without overcrowding.
  • Cook for 10–12 minutes, flipping halfway through, until the outside is golden and crispy.
  • Check that the fish flakes easily and reaches an internal temperature of 145°F before serving.

Notes

Pat catfish dry before coating to improve crispiness. Avoid overcrowding the air fryer basket for even cooking. You can substitute cornmeal with panko for a lighter crunch or skip breading for a blackened version. Works with fresh or frozen fillets (adjust cooking time accordingly).
