Ingredients

  • 1.5 cups fresh or frozen blueberries
  • 4 large lemons, juiced and zested
  • 1/4 cup granulated sugar
  • 4 cups cold water
  • Ice cubes for serving
  • Optional: 1-2 sprigs fresh mint for garnish

Instructions

  • Juice the lemons and finely zest the rinds
  • Combine blueberries, sugar, and 2 cups of cold water in a saucepan
  • Simmer 5 minutes until blueberries soften and sugar dissolves
  • Cool, then transfer to a blender and puree until smooth
  • Strain through a fine-mesh sieve for a smooth texture
  • Stir in lemon juice and zest
  • Refrigerate 30 minutes to chill
