Ingredients

  • 2 cups all-purpose flour
  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 very ripe bananas, mashed (about 1 ½ cups)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Beat in eggs, one at a time, then stir in mashed bananas.
  • Add dry ingredients to wet ingredients alternately with buttermilk, mixing just until combined.
  • Stir in vanilla extract, cinnamon, and nutmeg.
  • Pour batter into prepared pan and bake 40-45 minutes or until a toothpick inserted comes out clean.
  • Cool completely before slicing into 12 pieces.

Notes

Use bananas with brown spots for optimal sweetness and flavor
Store in an airtight container at room temperature for up to 3 days
Optional: Add 1 cup chocolate chips to dough for gooey texture
Sprinkle with powdered sugar before serving for extra elegance
