  • mixing bowls
  • whisk
  • measuring cups and spoons
  • oven

Ingredients

  • 2 cups old fashioned oats
  • 2 cups milk
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp melted butter or oil
  • 1 banana, sliced (optional)
  • 1/2 cup blueberries or diced apples (optional)

Instructions

  • Preheat the oven to 350°F and lightly grease an 8x8-inch baking dish.
  • In a large bowl, combine the old fashioned oats, cinnamon, baking powder, and salt.
  • In another bowl, whisk together the milk, eggs, maple syrup, vanilla extract, and melted butter or oil.
  • Pour the wet ingredients into the oat mixture and stir gently until combined.
  • Fold in optional ingredients like banana slices, blueberries, diced apples, or chopped nuts if desired.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 35 to 40 minutes until the top is lightly golden and the center is mostly set but still slightly soft.
  • Allow the baked oatmeal to cool for several minutes before slicing and serving warm.

Notes

For extra moisture, add mashed banana or fresh berries before baking. Avoid overbaking to keep the oatmeal soft and creamy inside. Store leftovers in the refrigerator for up to 5 days or freeze individual portions for up to 3 months. Reheat with a splash of milk for the best texture.
