Ingredients

  • 2 cups all-purpose flour

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon allspice
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and finely diced apples
  • 1 tablespoon apple juice

Instructions

  • Preheat oven to 350°F (180°C). Line baking sheets with parchment paper.
  • In a bowl, whisk flour, baking powder, salt, and spices until combined.
  • In another bowl, cream butter and sugars until light and fluffy.
  • Beat in eggs and vanilla extract one at a time.
  • Fold in apples and apple juice until evenly distributed.
  • Spoon dough into 1-inch balls about 2 inches apart on sheets.
  • Bake 12-14 minutes per batch, rotating halfway through.
  • Cool on sheets 3 minutes before transferring to wire rack.

Notes

Cookies keep in airtight containers for 5-7 days.
Use a vegetable oil blend to replace butter if preferred.
Add 1/2 cup chopped walnuts for extra texture.
