Ingredients

  • 3 medium Yukon Gold or Russet potatoes
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions

  • Wash and cut the potatoes into evenly sized cubes, about 1 inch.
  • Pat the potatoes completely dry using a clean towel to remove excess moisture.

Notes
