Ingredients

  • 3 medium zucchini
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • olive oil spray

Instructions

  • Wash and dry the zucchini, then cut into evenly sized sticks or wedges.
  • Set up three bowls: one with beaten eggs, one with breadcrumbs mixed with Parmesan and seasonings, and one optional bowl with flour.
  • Dip each zucchini piece into egg, then coat with breadcrumb mixture, pressing lightly to adhere.
  • Preheat the air fryer to 375°F for 3–5 minutes.
  • Arrange zucchini in a single layer in the air fryer basket and lightly spray with oil.
  • Cook for 10–12 minutes, flipping halfway through, until golden and crispy.

Notes

Pat zucchini dry before coating to avoid sogginess. Use panko breadcrumbs for extra crispiness. Do not overcrowd the air fryer basket. You can substitute breadcrumbs with almond flour for a low-carb option or skip Parmesan for dairy-free.
