Cut the potatoes into thin, even sticks to ensure even cooking.
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.
Drain and pat the potatoes completely dry with a clean towel.
Toss the potatoes with a light coating of oil until evenly coated.
Preheat the air fryer to 375°F (190°C) for 3–5 minutes.
Place fries in a single layer in the basket and cook for 15–20 minutes, shaking every 5 minutes.
