Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 eggs (beaten)
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Pat the shrimp dry with paper towels to help the coating stick properly.
  • Set up three bowls: one with flour, salt, and pepper; one with beaten eggs; and one with shredded coconut mixed with panko breadcrumbs.
  • Dip each shrimp into the flour, then egg, then coconut mixture, pressing gently so the coating sticks.
  • Preheat the air fryer to 375°F for 3–5 minutes.
  • Place the shrimp in a single layer in the air fryer basket without overcrowding.
  • Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
  • Serve immediately for the best texture and flavor.

Notes

For extra crispiness, lightly spray the shrimp with oil before air frying. Do not overcrowd the basket to allow proper airflow. You can use sweetened or unsweetened coconut depending on your flavor preference. Serve immediately for the best texture, and pair with sweet chili or mango sauce for added flavor.
