Ingredients

  • 4 catfish fillets
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 2 eggs or 1 cup buttermilk
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp light oil spray

Instructions

  • Pat the catfish fillets dry with paper towels to remove excess moisture.
  • Season the fillets evenly with salt, pepper, paprika, and garlic powder.
  • Prepare two bowls: one with beaten eggs or buttermilk, and another with cornmeal and flour mixture.
  • Dip each fillet into the egg mixture, then coat thoroughly with the cornmeal mixture.
  • Lightly spray the coated fillets with oil to help achieve a golden crust.
  • Place fillets in a preheated air fryer at 375°F, leaving space between each piece.
  • Cook for 10–14 minutes, flipping halfway through, until golden and crispy.
  • Remove when the fish flakes easily and reaches an internal temperature of 145°F. Serve immediately.

Notes

For best results, always preheat the air fryer and avoid overcrowding. You can substitute buttermilk for eggs for extra flavor. For a lighter version, skip the breading and use simple seasoning. Serve immediately for maximum crispiness.
