- 1 cup milk
- 1 tablespoon butter (melted)
- 2 tablespoons sugar
- Pinch of salt

- 1/2 cup cream cheese (softened)
- 2 tablespoons powdered sugar
- 1 tablespoon matcha powder
- 1 teaspoon vanilla extract
Instructions
- Prepare crepe batter: whisk together flour, matcha powder, sugar, and salt. Beat eggs with milk and melted butter, then add to dry ingredients and mix. Let the batter rest for 30 minutes.
- Cook the crepes: Heat a non-stick skillet over medium heat, lightly grease with butter, and pour a small amount of batter into the pan. Cook until edges lift, flip, and cook the other side. Repeat with remaining batter.
- Prepare filling: Whip heavy cream to stiff peaks. Beat cream cheese with powdered sugar until smooth, then add matcha powder and vanilla. Gently fold in whipped cream.
- Assemble: Layer each crepe with matcha filling, stacking them on top of each other. Once all crepes are layered, roll them tightly into a log and refrigerate for 1 hour.
- Slice and serve: Once set, slice the roll into portions and garnish with extra matcha powder or whipped cream as desired.
Notes
Let the cake sit in the fridge for a few hours or overnight for the flavors to meld. This will make slicing easier and more precise.
