Instructions
- Prepare your workspace by laying out lollipop molds or arranging sticks on a parchment-lined tray.
- In a medium saucepan, combine sugar, corn syrup, and water. Stir gently and bring to a boil over medium heat.
- Use a candy thermometer to check the syrup’s temperature. Cook until the syrup reaches 300°F (150°C), the hard crack stage (about 8-10 minutes).
- Remove from heat and quickly add your desired flavoring extract and food coloring (if desired). Stir to combine.
- Carefully pour the hot syrup into molds or drizzle around the lollipop sticks.
- Let the lollipops cool completely at room temperature (about 20-30 minutes).
- Wrap in cellophane or wax paper for storage. Enjoy!

Make sure to work quickly after the syrup reaches 300°F since it hardens fast. Always handle the hot syrup with care to avoid burns.
