- 2–3 medium-sized cucumbers (preferably Persian or English cucumbers)
- 3 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 2 cloves garlic, minced
- Optional: Sesame seeds, red onion, chili flakes

Instructions
- Slice cucumbers thinly using a sharp knife or mandolin slicer. Place them in a colander.
- Sprinkle the cucumbers with salt and let them sit for 10-15 minutes to draw out excess moisture. Drain the cucumbers and pat dry.
- In a bowl, mix together rice vinegar, soy sauce, sesame oil, sugar, and garlic to make the dressing.
- Toss the cucumbers with the dressing and stir to combine. Add optional sesame seeds, red onions, or chili flakes for extra flavor and crunch.
- Serve immediately or refrigerate until ready to enjoy!

For a variation, try using different vinegars or add more vegetables like bell peppers or cherry tomatoes for added flavor and color.
