  • 2 tbsp grated Parmesan cheese (for croutons)
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese (for dressing)
  • 2 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp anchovy paste (optional)
  • Additional grated Parmesan cheese for garnish

Instructions

  1. Preheat your grill, pan, or oven. Season the chicken with salt, pepper, garlic powder, and paprika. Cook until internal temperature reaches 165°F (74°C).
  2. For the croutons, preheat the oven to 375°F (190°C). Toss bread cubes with olive oil, garlic powder, Italian herbs, salt, and pepper. Bake for 10-15 minutes until golden and crispy, flipping halfway. Optional: Add Parmesan cheese in the last 2 minutes of baking.
  3. For the dressing, whisk together mayonnaise, Parmesan cheese, Dijon mustard, lemon juice, garlic, anchovy paste (optional), salt, and pepper in a bowl. Adjust seasoning to taste.
  4. Assemble the salad by placing Romaine lettuce in a bowl. Slice the cooked chicken into strips and add to the lettuce.
  5. Top with homemade croutons, drizzle with Caesar dressing, and toss gently. Garnish with additional Parmesan cheese, if desired.

Notes

To meal prep, store the components separately. Keep the chicken, croutons, and dressing in airtight containers in the fridge for up to 3 days. Avoid storing lettuce with dressing to keep it fresh.
