- 1 cup black beans (soaked overnight)
- 500g beef (brisket or stew meat, cubed)
- 500g pork (ribs or shoulder, cubed)
- 1 onion (chopped)
- 4 garlic cloves (minced)
- 1 teaspoon cumin
- 2 bay leaves
- ½ teaspoon pink Himalayan salt (or to taste)
- Fresh cilantro or parsley (for garnish)
- Side dishes: steamed rice, farofa
Instructions
- Heat oil in a large pot over medium heat. Add the chopped onions and garlic, sauté until softened and fragrant.
- Add the cubed beef and pork, and brown them on all sides to lock in the flavors.
- Add the soaked black beans, cumin, and bay leaves. Stir to combine.
- Pour in enough water to cover the ingredients, bring to a boil, then reduce the heat and let it simmer for 1-1.5 hours, until the beans are tender and meat is cooked through.
- Adjust seasoning with pink salt, and garnish with fresh cilantro or parsley.
- Serve with steamed rice and farofa on the side.
Notes
Be sure to give the dish enough time to simmer for the best flavor. For an extra twist, try adding vegetables like carrots or bell peppers.
